WHEAT COCONUT SWEET DOSA

Ingredients:
Whole wheat flour - 2 cups
Freshly grated coconut - 1 cup
Salt to taste
Sugar - 1 or 2 tbsp


Preparation:
Mix salt with wheat flour and add water to prepare dosa batter.


Heat a tawa and pour one ladle batter.


Sprinkle some coconut and sugar to taste.


Allow to cook for about 1 minute. Fold and serve.


Sweetness of sugar, freshness of coconut and taste of wheat together gives a heavenly treat to the taste buds.

APPLE JOWAR MOIST CAKE

Ingredients:
Eggs - 2
Brown sugar - 1/3 cup
Jowar flour - 1/2 cup
Almond flour - 1/2 cup
Apple small sized - 1
Lemon juice - 1/2 tsp
Orange juice - 1/4 cup
Melted butter - 1/4 cup
Baking powder - 1 tsp
Cinnamon powder - 1/4 tsp

Preparation:

Pre-heat oven to 180 degrees celcius.
Grind apple with lemon juice and orange juice.


Beat eggs with sugar until fluffy.


Mix jowar flour, almond flour and baking powder together.


Fold in this mixture to the egg mixture. Add apple paste, cinnamon powder and butter.


Fill in a greased and floured 18 cn cake tin.


Bake in preheated oven for 25 to 30 minutes.
 

After 10 minutes remove from the tin, cool and serve.

PAZHAM PORI / PLANTAIN FRY

Ingredients:
Plantain - 2 large or 3 medium
Non bleached all purpose flour or whole wheat flour - 1 cup
Rice flour or fine semolina - 1 tbsp
Sugar - 1 tbsp
Sugar to taste
Turmeric powder (optional) - a pinch
Oil to deep fry


Preparation:
Select ripe plantain. The skin must be black. Only then it tastes good.


Mix all the ingredients except oil and plantain in a mixing bowl. Add water to make batter of dosa or pancake consistency.


Peel the plantains and half them.


Now slice each piece to 4 to 6 pieces.


Heat oil in a heavy bottomed deep pan. When oil is hot enough to fry, dip plantain slits in the batter and fry until golden. When one side is golden turn and fry until the other side too is golden.




Serve hot with tea or coffee. It hoes best with black tea or black coffee.

EGG DOSA FOR TODDLER

Ingredients:

Egg - 1
Idly batter - 1/4 cup
Salt to taste
Pepper powder - a pinch
Cumin powder - a pinch (optional)

Preparation:
Beat egg with salt, pepper powder and cumin powder.


Now add idly batter and mix well. This will be more watery than a dosa batter.


Heat a tawa and pour 1 ladle full of batter and rotate the pan to spread the batter all over.


When it's cooked on one side flip carefully and let it cook for just a few seconds.


Serve hot with any chytney.

GREEN GRAM PEARL MILLET PAN CAKE

Ingredients:
Sprouted green gram- 1/2 cup
Pearl millet flour - 1/2 cup
Jaggery powder / brown sugar - 1/4 cup
Milk - 1 to 2 tbsp
Egg - 1
Cardamom powder or cinnamon powder - a pinch
Butter to cook pan cake
Baking powder - 1/2 tsp (optional, if you need it really fluffy)

Preparation:
First grind green gram, millet flour and jaggery coarsely in a mixer grinder.


Then add milk and grind to a smooth batter.


Now add egg and cinnamon powder and run the mixer for a few seconds.


Prepare pan cakes in medium low flame. Drizzle some butter to the edges.


Serve with honey or syrup.

MILLETS CHEESE CAKE

Ingredients:
Jowar / great millet flour - 125 grams
Kambu / pearl millet flour - 50 grams
Butter (at romtemperature)- 125 gram
Cottage cheese / soft paneer - 125 grams
Yoghurt - 2 tbsp
Eggs - 2
Sugar - 100 gram
Salt - a pinch
Baking powder - 1 tbsp
Vanilla sugar / vanilla extract - 1 tsp


Preparation:
Pre-heat oven at 180 degrees Celsius.
Cream together butter, cheese / paneer, salt and sugar.


Add eggs one by one and beat well.


Mix jowar flour, kambu flour and baking powder together.


Add little by little to the batter and beat well. Finally add 2 tbsp yoghurt and beat again.


Grease and dust a 18 cm cake pan and bake for 40 - 45 minutes.



Soft millets cheese cake isready to serve plainly with tea or with fresh cream.

FRENCH BEANS MINI DOSA

Ingredients:
French beans (cut into small pieces) - 1/2 cup
Oil/ghee - 1 tsp
Dosa batter - 1/2 cup
Salt to taste
Oil/ghee to prepare dosas

Preparation:
Saute beans in oil for about 5 minutes till the raw odor is removed.
  

Grind in a mixer with little batter to a smooth paste. Don't add water. If necessary add little more batter.

Mix with the rest of the batter and add salt to taste.

Let the batter sit for about 30 minutes.

Now prepare mini dosas. Drizzle few drops of oil / ghee to the sides.

Serve with any gravy or chutney.

Mostly kids don't eat beans. In this recipe they get the benefits of beans with the main dish.

CARROT PUTTU BALLS

Ingredients:
Already prepared puttu - 1 cup
Grated carrot - 1 cup
Ghee - 2 tsp
Sugar -2 tbsp
Chopped cashews - 1 tbsp

Preparation:
Mix sugar with puttu and set aside.


Grate carrot and set aside.


Heat ghee in a pan and roast cashew nuts. Add carrot and allow to cook in ghee itself.


When carrot is cooked add puttu and cardamom powder. Mix well.


Prepare balls and serve.
