GERMAN CHRISTMAS STOLLEN



Ingredients:
All purpose flour - 600 grams
Luke warm milk - 200 ml
Butter - 200 gram
Powder sugar - 50 grams
Salt - 1/4 tsp
Egg - 1
Dry yeast - 7 gram
Vanilla extract - 1 tsp
Lemon zest - from 1/2 lemon
Black sultanian raisin - 75 grams
Golden raisins  - 100 grams
Mixed candied peel - 75 grams
Blanched and chopped almonds - 50 grams
Orange juice - 1/2 cup (Traditionally rum is used)

Extra:
Butter and powder sugar - 2 tbsp each for single coating or more according to the layers you make.

Preparation:
Soak raisins and mixed candied peel in orange juice.

For the dough take flour in a big bowl and make a pit in the middle


Pour warm milk in the middle, add yeast, a pinch of sugar, cover with damp cloth and rest for 10 minutes.


After 10 minures add powder sugar, salt,  egg, vanilla extract and lemon zest. Make a dough, its not a matter even if all flour is not used. Allow to raise for 45 minutes.


After 45 minutes add butter and make a soft dough. Rest for 30 minutes.


After 30 minutes mix the raisin-peel mix and almond and make a soft dough.


In a tray place a baking sheet and roll in to 1 inch thick disk. Fold one side to the center to get the traditional stollen shape.


Cover with cling film and rest for 30 minutes. In this mean time heat oven at 180 degrees Celsius.
After 30 minutes bake at lower tray for 35 to 45 minutes.

When completely cooled down, melt 2 tbsp butter. Brush over the stollen and sprinkle icing sugar.
Again repeat brushing butter and icing sugar coating several times to get traditional stollen. I just made a single layer.


Soft and mouth watering stollen is ready to serve.




Note:
To get traditional taste add rum in place of orange juice and coat about 1/2 cm sugar.
Also store for a week by covering with a cling film. After 1 week you get the traditional taste.

TOMATO SAUCE WITH CHICKEN FOR PASTA

Ingredients:

Pasta - 200 grams
Chicken - 250 grams
Tomato - 2
Chopped onion - 2 tbsp
Chopped garlic - 1 tbsp
Butter - 1 tbsp
Dry Oregano - 1/2 tsp
Dry basil - 1/2 tsp or Fresh basil - few leaves (finely chop)
Salt and pepper to taste
Mozzarella cheese - 200 grams

Preparation:

Heat butter in a pan and add garlic.

When it turns brown, add onion and saute till it is translucent.
  

Then add chicken and allow to cook closing with lid. Do not add water.

When it is done add chopped tomatoes.

Allow to cook till it is mashed.

Add oregano, basil, pepper and salt. Mix well.

Now add pieces of mozzarella cheese and not the grated. Do not mix after adding cheese.

Serve hot with pasta.

TURKEY BREAST WITH CAULIFLOWER

Ingredients:

Turkey breast - 400 grams
Finely chopped garlic - 1 tbsp
Chopped green chilies - 3
Dried rosemary, dried basil - each 2 pinches
Salt and pepper to taste
Lemon juice - 1 tbsp
Oil - 1 tsp
Butter - 2 tbsp
Cooked cauliflower to serve with

Preparation:

Clean the breast and apply everything except butter and cauliflower to the breast.


Heat butter in a pan and place the breast pieces.


When it turn pale on one side turn and let it cook closing with a lid. Allow to cook for about 10 minutes on one side. In the mean time clean cauliflower and cook in little salted water, When it is cooked drain water and set aside to serve with.


Now open the lid and turn the pieces to cook on the other side. Close with a lid now too. After 10 minutes open and allow the water to evaporate and when the pieces are still juicy take out. Serve hot with cooked cauliflower and any sauce of your choice.

MINCED MEAT BALLS

Ingredients:

Minced meat (I used turkey meat. Any meat can be used) - 500 grams
Finely chopped onion - 1 small
Finely chopped parsley - 30 grams
Grated garlic - 1 tsp
Salt to taste 
Pepper powder - 1 tsp
Cumin powder - 1/2 tsp
Eggs -2
Chopped green chilies - 2 (optional)
Butter to fry the meat balls
Any salad to serve with

Preparation:

Mix everything together except butter. 

Make a lemon sized ball and flatten it lightly. Heat 2 tbsp butter in a shallow pan and shallow fry in medium heat.

Let it cook for 8 mins on one side and then turn to cook on the other side for another 8 minutes.Take one piece and cut in the middle to check whether it is done. If no pink is seen then it is well cooked.
Serve with salad.

Note:
Carefully add a little salt. It tastes more salty after cooking.

COLORFUL VEG SPAGHETTI

Ingredients:

Spaghetti - 250 grams
Vegetables (sliced) (various colors like capsicum, carrots, beans, zucchini) - 2 cups
Butter - 2 tbsp
Sliced garlic - 1 tbsp
Sour cream - 1/4 cup
Salt and pepper to taste
Lemon juice - 1 tsp

Preparation:

Cook spaghetti in salted water and set aside.
Set medium flame and heat butter in a pan and add garlic.

When good flavor releases add vegetables.


Add salt to taste and allow to cook. When done add sour cream and mix well.


Finally add cooked spaghetti,pepper powder to taste and lemon juice. Mix well and
serve hot.

CHICKEN NUGGETS

Ingredients:

Skinless boneless chicken breast from 1 chicken
Eggs - 2
Plain flour - 1/2 cup
Bread crumbs - 1 1/2 cups
Salt and pepper to taste
Garlic paste or powder - 1 tsp
Oil to fry

Preparation:

Clean the chicken breast and cut into small pieces about 1 1/2 inches and 1 cm thickness. 

Mix the flour with salt, pepper and garlic in a big vessel.

Now add the chicken pieces and mix well by shaking the vessel.  If the pieces stick to one another then separate it with hands.

Heat oil in a pan. Beat egg and set aside. Mix salt and pepper to bread crumbs. Dip the chicken pieces in beaten egg and then roll in bread crumbs. Press the pieces so that crumbs stick well to them.

Now fry in hot oil. When it turns brown turn and cook the other side. 

Arrange on paper towels to remove excess oil.

Serve hot with ketchup, mayonnaise or any other sauce of your choice.

FRIED DONUTS WITHOUT YEAST

Ingredients:


For donuts:
All purpose flour - 3 cups
(I used organic one without any additives)
Sugar - 1/2 cup
Vanilla - 1 tsp or vanilla sugar - 2 tsp 
Salt a pinch
Egg - 1
Milk - 1/2 cup
Baking powder - 3 tsp
Melted butter - 1 tbsp
Oil to fry

Glaze:
Powder sugar - 2 cups
Vanilla or strawberry glaze
Water

Preparation:

Beat egg in a bowl. 

Then add melted butter, sugar, vanilla sugar or vanilla essence  and salt. Beat well.

Then add milk and beat again. 

Sieve together flour and baking powder. Now add about 2 1/2 cup flour to make a dough. If more flour needed  then add little by little to make a non-sticky dough.

Now roll into about 5 mm thickness and cut.

Fry in oil in medium heat.
Turn when golden browned on one side and let it fry till golden on other side.

Glaze:

Take 2 cups powder sugar and add about 4 tbsp water. Mix it well and then add vanilla or strawberry cake glaze. Keep aside and dip the donuts once fried and decorate.
